Wild Boar Roast with Soy/Sugar Cane marinade

Potted meat with tantalizing flavors. Recipe from Argentinian Chef Rodrigo Toso who demonstrated the preparation. (see Gastronomy section)

Ingredients:
400 g. Wild boar
4 tbs Cane Sugar Syrup
4 tbs Soy sauce
1 clove garlic, chopped
Smoke extract, a few drops of liquid smoke

Method:
Salt and pepper the meat then place in a marinade of the remaining ingredients. Cover with foil and marinate in refrigerator for 3 hours, turning meat every hour.

Preheat oven very hot, approximately 400 degrees. Cook meat, keeping in marinade, 1/2 hour, uncovered.

Lower oven heat to very low, approximately 300 degrees, cover meat and cook 2 hours basting with pan juices every half hour.
